Coconut Rice

Here's a simple way to add a different layer of flavour to your curry.

When cooking your jasmine rice, just add a cup of  coconut milk to two cups of rice. Add 3 1/2 cups of water, a good pinch of salt, stir and bring to the boil. Cover with a tight fitting lid and steam for 12 mins on the lowest heat. Without removing lid, let stand for a further 8 mins, then fluff with a fork and serve with your Love Thy Curry.  Enjoy!
